This holiday cookie recipe is everything you love about a rich cup of marshmallow topped hot cocoa in a deliciously chewy, rich hot chocolate cookie!

You might find that the marshmallows disappear while baking. To counteract that, gently press a few mini marshmallows halves and chocolate chips on top of the cookies JUST as they come out of the oven!

Marshmallow Tips

 Always use unsalted butter in baking recipes.  You can better control the salt and it can also affect the texture in your cookies.

Cookie Recipe Secret #1-Soft, Unsalted Butter.

Although some recipes call for chilling the dough, I’ve found I get the best results by getting straight to scooping.

Cookie Baking Secret #2 Room Temperature Batter.

Chill the cookie dough balls in the refrigerator for at least 1 hour then add to a labeled zipped-top bag. Freeze cookie dough for up to 3 months.
