Easy Strawberry Cheesecake Rice Krispies


Let's Make...

"Smooth and creamy no-bake cheesecake meets a rice krispies treat crust and bright, fresh strawberry sauce in these elegant Strawberry Cheesecake Rice Krispies."


NOTE: I prefer unsalted to control the sodium levels. 1 stick of butter has about 1 tsp of salt.

TIP: With this no-bake method, we are trying to control the moisture content. If you use homemade whip cream, make sure it is very stiff.


Melt butter in a saucepan. Stir in the marshmallows until completely melted. Add Rice Krispie Cereal and stir until even coated.

Make the Rice Krispies


Spray a deep 9×13 pan with cooking spray. Using wax paper or a buttered spatula, evenly press the mixture into the pan.

Add to Pan



In a small bowl, mix sliced strawberries and sugar. Allow to sit about 30 minutes, and stir a few times, until the strawberries release their juice.

Strawberry Topping


Mix gelatin according to package. Add cream cheese to mixer and sift powdered sugar. Mix on low speed. Add whipped topping until soft peaks form.


No-bake cheesecake


Spoon the cheesecake over the crust and spread evenly. Refrigerate one hour. Just before serving, gently spoon the strawberries over top.
