Garlic Shrimp with orzo is fast, fresh, and flavorful. Easy & elegant, this recipe includes fragrant aromatics and garlicky shrimp with an irresistible butter sauce that's bright and lemony.
Orzo: – 2 cups Chicken stock plus water – salt & pepper – 8 oz uncooked orzo – unsalted butter
Shrimp: – olive oil – garlic – large shrimp – fresh ground pepper – salt – parsley – 1 lemon – dry white wine – unsalted butter – capers
The secret to success is to toast the orzo in melted butter before boiling. We use a bit of chicken stock or broth here to add additional flavor.
Heat up butter in a skillet. Stir in orzo well to coat. Stir continuously until the pasta is lightly golden brown. Then boil according to package directions.
Heat olive oil in a large skillet. Add garlic, cook over low heat for 1 minute until fragrant. Add shrimp, salt and pepper to taste, and 1 tablespoon parsley. Cook 3 minutes on each side.
To the shrimp liquid, add lemon juice, wine, and butter. Bring to a boil, lower the heat, and reduce by half. Remove from heat and add lemon zest, capers, and parsley. Pour over orzo.
