Quinoa and Chickpea Salad

Quinoa and Chickpea Salad is packed with vibrant flavors of the Mediterranean. It is a nutritious salad recipe packed full of flavor that you will love for work lunches!


Salad:  – Uncooked quinoa – Red Onion – Cucumber – Red Bell Pepper – Chickpeas – Kalamata olives – Chopped Fresh Herbs – Goat Cheese or Feta (Optional)

Dressing:  – 2 Tbsp Olive Oil – 2 Tbsp Red Wine Vinegar – 2 Tbsp Lemon Juice – 1 tsp Garlic Powder – Pepper & Salt – 2 tsp dried Oregano


Make dressing by whisking all of the ingredients in a small bowl or shaking in a jar. Refrigerate until ready to use.

Prepare Dressing



Rinse the quinoa before cooking. Cook the quinoa over the stove as recommended on the package. Fluff and allow to cool when done.

Cook Quinoa


In a large bowl, add all of the salad ingredients to the quinoa followed by the dressing. Toss to coat.

Combine Ingredients


Taste and season with additional lemon juice or salt and pepper. Serve cool and store leftovers in refrigerator.
