This zesty Mediterranean salad is bursting with fresh chopped veggies, olives, cheese, and an amazing homemade Greek Salad dressing.
I don’t use a lot of oil, but a very light, neutral oil like a light tasting olive oil should be used to make your own salad dressing.
Wash and cut all vegetables and cheese into smaller than bite sized pieces and toss together in an oversized bowl for tossing.
Toss all salad dressing ingredients into a small bowl and whisk thoroughly. Store on countertop until ready or in refrigerator.
Pour salad dressing over the top and toss salad ingredients together. Season with additional salt and pepper to taste.
Serve with crusty thin sliced bread for a party or side dish. Use dressing as a marinade for chicken or fish too!
