Happy Monday! I love a good crockpot recipe and this Slow Cooker Asian Beef with a honey ginger marinade is one of my all-time faves! It’s sweet and tangy but is the most balanced version I have ever seen and includes ingredients you can find at almost any local grocery store. And, trust me, I have experimented with many different kinds of Asian and Indonesian cooking- some good, some incredibly odd (ick!) to my western palate. I wish I used my crockpot more, especially since me and my family are such a busy bunch. I used to make more but my last slow cooker was defective and I decided to try to live with it. I never figured out what exactly was wrong with it but it would a 2lb roast in 2 hours on low! There was no slow cooking with my crockpot. 6 hours and the meat would have been so tough, you could probably make shoes out of it (which would be completely odd to wear your dinner). I got this pressure cooker for christmas and I know one of the first recipes that I am going to adapt is this one. Ok, enough complaining about my old crockpot and on to the best part- the recipe!
Slow Cooker Asian Beef Roast
- 1/2 Cup Lower Sodium Soy Sauce
- 1/2 Cup Mirin (Sweet Rice Wine) You can substitute with Sherry in a pinch but it is not the same
- 2 Tbsp Honey
- 2 Tbsp Dark Brown Sugar
- 2 Tbsp Ginger Minced
- 3 garlic cloves Minced
- 1/2 Cup Water
- 2 tsp vegetable oil
- 2 lbs Beef Chuck Roast
- Whisk all ingredients in a bowl. Place steaks and marinade into slow cooker. Cook on low 6-8 hours until tender and no longer pink. Serve with rice and steamed vegetables if desired.
