Bite Sized appetizers are the perfect party snack! These cracker topping desserts make a satisfying sweet snack or a party appetizer!
With the warmth of spring in the air, my friends and co-workers are beginning to have a few backyard parties. Last minute invitations and requests for homemade goodies are kind of the standard in my world. Can you feel my stress level rising? Quick, no bake desserts are my savior in times like these.
The inspiration for these little tasty treats came from my son’s after school snack. As I was pouring over cookbooks to figure out what pastry delight I actually had time to make for a recent house-warming party, I served him one of his favorite quick snacks – apples with caramel dipping sauce and crackers on the side. The kid is pretty much addicted to crackers but that’s a whole n’other story.
Simple layering is the key to creating this caramel apple treat. Lay out the crackers on a sheet of wax paper or silpat. Spread a bit of caramel over the top. This will act like the glue for your apple slices so you don’t need very much.
The apple layer is next. I liked the look of thin diced apples but slicing would work well too. My husband and I agreed that the better tasting ones had a higher apple to caramel ratio so be generous.
A crunchy mixture of nuts and oats crumbs top it all off. Recipe below.
Finish with a light drizzle of caramel and done. These can also be put in the refrigerator. I finally invested in a few real piping tips! A plastic bag with the tiny tip snipped off works just fine though.
For the party, I also whipped up a few variations including no-bake cheesecake, coconut creme pie, and, of course, the caramel apple bites. These are just the cutest little desserts ever. What is it about bite sized food that just makes it so fun to eat? This is definitely a keeper.
- 1 Apple peeled, cored, and diced
- 1 jar Caramel Sauce
- 15 Ritz Crackers
- Streusel Nut Topping-
- 1/4 cup of walnuts
- 1/4 cup of quick oats
- 2 tsp Brown Sugar
In a food processor, add walnuts, oats, and brown sugar. Chop and blend until desired consistency.
Layout Ritz crackers on a sheet of wax paper or silpat. Spread some caramel sauce over the cracker. This will keep the apples from sliding off.
Place the diced apple on top. Sprinkle with the nut topping and then drizzle with a bit more caramel sauce.
